Easy Weeknight Turkey Burgers

Make some yummy, juicy turkey burgers with very little effort for a great weekday meal on even the busiest days. While they are wonderful as is, to make them truly special, make your own burger buns using the very easy and very good Bread Machine Rolls recipe. You can follow the recipe exactly, which calls for a combination of bread flour and wheat flour, or just use all bread flour.

This recipe makes 6 medium burgers.

Ingredients:

1 1.3 pound package of ground turkey, preferably 85 percent lean

2 tablespoons of dry stuffing mix (another great recipe that uses ground turkey and stuffing mix can be found here.)

1 egg white, beaten (or 3 tablespoons of egg white from a carton)

2 tablespoons of diced onion

2 scant teaspoons of dried parsley

1/2 teaspoon of minced garlic

1/2 teaspoon of salt

1/8 teaspoon of fresh ground pepper.

Directions:

In a large bowl, mix the ground turkey, the dry stuffing mix, onion, egg whites, parsley, garlic, salt, and pepper. Form into 6 patties. You can make the patties up to one day ahead.

Cook the turkey burgers in a medium skillet over medium heat, turning once, until they reach an internal temperature of 180 degrees F.

Place the burgers on buns (see note above), and top with your favorite turkey burger fixings.

Also, if you happened to make my last recipe, the Quick and Fancy Crockpot Chicken the other day, now is the time to take advantage of any leftovers and get some more meals out of it. This is what I did today.

First, I separated the chicken from the sauce (the recipe makes a lot of sauce). I tried to remove as much sauce from the chicken as possible, including any onions or mushrooms. Then I cut the chicken up into dices and added mayonnaise to turn it into a very tasty chicken salad.

The sauce is great on plain pasta. I put an airtight cover on it, labeled it Tomato Cream Sauce, added a date and placed it in the freezer for a future meal.
