Eat Like the Irish

Did you know that Corned Beef and Cabbage is not an authentic Irish dish? In fact, according to historians, if you were to celebrate St. Patrick’s Day in Ireland you would likely be sharing a meal of fish rather than Irish Stew.

Given that information (and the fact that I already posted a recipe for Corned Beef and Cabbage), I’ve decided to help out those of you who prefer to eat like a real Irishman tomorrow. You can honor St. Patrick and celebrate all things Irish by feasting on some of my favorite simple fish dishes:

HOMEMADE FISH STICKS AND TARTAR SAUCE

Ingredients:

1 1/2 cups mayonnaise

1 tablespoon fresh lemon juice

1 tablespoon capers

2 tablespoons chopped dill pickle

1 tablespoon fresh chopped dill

3/4 cup flour seasoned with salt and pepper

2 eggs

4 tablespoons water

1 1/2 cups Italian seasoned bread crumbs

1 1/2 cups panko (Japanese bread crumbs)

1 1/2 to 2 pounds white fish fillets (cod, haddock, orange roughy)

3/4 cup canola or vegetable oil

Lemon wedges

Directions:

To make tartar sauce, whisk together first five ingredients and refrigerate until ready to use.

Cut fish into strips.

Place the seasoned flour in a shallow dish.

Beat eggs and water in a shallow bowl.

In another shallow dish, mix the breadcrumbs and the panko.

Dip each fish strip (individually) into the seasoned flour, the egg and then the breadcrumb mix.

Heat the oil in a saute pan over a medium-high heat.

When the oil is hot, carefully place fish sticks in oil and cook on both sides until they’re browned. Be careful not to overcrowd the pan.

Remove fish and place on paper towels to remove any excess oil.

Serve with lemon wedges and tartar sauce.

CLASSIC TUNA MELT

Ingredients:

2 (6 ounces) cans tuna, drained well

1/4 cup finely diced celery

2 tablespoons diced red pepper

1/4 cup mayonnaise

1/4 cup sour cream

1 teaspoon garlic powder

1/4 teaspoon black pepper

1 tablespoon fresh lemon juice

1 tablespoon chopped fresh dill

1 loaf crusty, French bread, sliced in half

2 cups shredded cheddar cheese

Directions:

Preheat oven to 350 degrees.

Mix together first 9 ingredients.

Spoon the tuna mixture on one piece of the French bread.

Top with cheese and place the other piece of bread on top.

Wrap sandwich in foil and bake for 20 to 30 minutes.

Remove from oven and cut into smaller pieces before serving.
