When one of my best friends told me about this éclair dessert recipe I thought it sounded quite strange. I could not image eating pudding and graham crackers and calling that dessert. However, she assured me that her mother made it all the time and it was always a hit at family and friend get togethers. So, I relented and tried making it one day when I happened to have all the ingredients on hand. That is one nice thing about this recipe; you may already have all the ingredients and if not keeping them on hand for a quick dessert is inexpensive and easy to do. It is also a recipe easy to convert into a low fat and low calorie option without tasting like it.
Éclair Dessert
Ingredients:
2 individual packages graham crackers
2 (3 ounce) packages instant sugar free vanilla pudding mix
3 cups skim milk
1 (8 ounce) container frozen fat free whipped topping, thawed
1 (16 ounce) package prepared chocolate frosting
Directions:
Line the bottom of a 9×13-inch pan with graham crackers. In a large bowl, combine pudding mix and milk. Stir well. Stir in whipped topping to pudding mixture. Spread half of mixture over graham cracker layer. Top with another layer of graham crackers and the remaining pudding. Top all with a final layer of graham crackers and frost with chocolate frosting. Refrigerate until serving.
You can switch things up a bit by using chocolate graham crackers or cinnamon graham crackers. In addition, you can have fun choosing different types of pudding for different flavors. You can use banana instant pudding and top with strawberries or use vanilla and chocolate pudding or white chocolate. Of course you can also change the frosting flavors or top with fat free whipped topping and add fruit for garnish. Have fun!
