Egg Foo Young
The classic chinese american dish.

INGREDIENTS:
6 large eggs, beaten
1 tbs soy sauce
1 cup bean sprouts
1/8 tsp pepper, white
1 tbs oil, vegetable
1 tsp salt
2 medium scallions, thinly sliced
1 medium onions, minced
1/2 lb shrimp, finely diced
2 tbs soy sauce
1 tbs sherry, dry
1 tbs cornstarch

DIRECTIONS:
1. Rinse bean sprouts in cold water. Heat oil in pan and add scallions, onion & sprouts. Stir fry 1 minute.
2. Add cornstarch, soy sauce, shrimp, salt & pepper. Mix well. Remove to dish & allow to cool.
3. Combine with eggs. Heat 2 tsp oil in pan & ladle in 1/6 of egg mix. Fry til golden on both sides.
4. Keep pancakes warm in low oven, while making sauce.
5. Combine last four ingredients in small pan, bring to boil & simmer gently til thickened.
