Egg Substitutes


I want to share with you a list a friend of mine shared with me about egg substitutes. My friend has a daughter who is allergic to eggs. I use eggs so often in baking and cooking that I wondered how one would substitute eggs for all those different needs. In addition, I thought it would be nice to substitute eggs based simply on the fat and cholesterol. However, do not be deceived, eggs are not unhealthy. Yet, many seek egg free baked goods and such. I hope you find this resource helpful. Keep in mind; it works best to substitute up to two eggs only. If you are looking to substitute a larger amount of eggs you may want to purchase a carton of egg whites or egg substitute from your local grocery store. If you want the protein of an egg but not the fat consider using egg whites as your substitute. However, it is always nice to have a list of egg substitutes if you ever run out of eggs or plan to make a fat free dessert.

List of Egg Substitutes

1 tsp baking powder plus 1 1/2 TBS water + 1 1/2 TBS oil

1 tsp baking powder plus 1 TBS water plus 1 TBS vinegar

2 TBS water or milk plus 2 TBS flour plus 1/2 TBS shortening plus 1/2 tsp baking powder

1 TBS vinegar plus 1 tsp baking soda

2 TBS lemon juice plus 1 tsp baking soda

1 TBS cornstarch plus 3 TBS water for each missing egg

2 TBS arrowroot flour

2 TBS potato starch

1 TBS tapioca starch plus 1/4 cup warm water (mix and then allow to gel a bit before using)

1 tsp yeast dissolved in 1/4 cup warm water

1/2 medium sized banana, mashed plus 1/4 tsp baking powder

2 TBS applesauce

3 TBS mayonnaise (Try fat free.) (Not a substitute for allergies to eggs.)
