Today, in Eliminate Food Waste: You Can Eat These Part 2, I’ll expand the number of items that we may be missing.
Wilted or Bendy Carrots
You can refresh wilted carrots very easily. Simply soak them in ice water for a few hours. They will come back to life, and you can eat them normally. Isn’t that a great trick?
Limp Greens
If you have some spinach or arugula greens that are starting to wilt, you can still use them. Chop them up and throw the greens into a blender, along with olive oil, garlic and walnuts to make a homemade pesto that can be used on Italian bread or crackers.
Orange and Lemon Peels
Before you hand your child an orange or use for for its juice, first take advantage of its zest. Use a grater to grate the orange zest or lemon zest. You can then place the zest in an ice cube tray with a little bit of water and freeze it for later use. Then, when a recipe calls for zest, you will always have it on hand. You can also use the cubes in beverages, for a refreshing taste and extra Vitamin C.
Leftover Rice
If you don’t have enough cooked rice to make a dinner meal, turn it into breakfast instead. Just warm the rice up with a dash of cinnamon, some brown sugar, milk and a few raisins. Healthy and frugal.
