The school year is winding down for kids across the country. For students, this means days filled with field trips and parties. For parents, it means remembering to make or buy treats for those end of the school year celebrations.
If you are looking for simple, affordable and tasty snacks to contribute to your children’s school gathering, consider making the following cookie recipes. They don’t require a lot of skill… or money.
COCONUT OATMEAL CHOCOLATE CHIP COOKIES
Ingredients:
4 Tablespoons (1/2 stick) butter, softened
3 Tablespoons coconut oil
1/2 cup light brown sugar
1 egg
2 teaspoons vanilla extract
1/2 teaspoon sea salt
1 cup rolled oats
1/4 cup flaxseed meal
1 cup whole wheat pastry flour
3/4 teaspoon baking powder
1/2 cup unsweetened coconut flakes
1/2 cup dark chocolate chips
Directions:
Preheat oven to 375 degrees.
Whisk together butter and oil in a large bowl until smooth. Whisk in sugar, egg, vanilla and salt.
In another bowl, combine oats, flaxseed, pastry flour and baking powder, and then add to butter mixture.
Combine thoroughly. Mix in coconut flakes and chocolate chips.
Use a spoon to form cookies and place them on greased baking sheets.
Bake for 8-10 minutes.
Remove from oven and allow to before serving.
CHOCOLATE CRUNCH COOKIES
Ingredients:
1 cup butter flavored Crisco (plus additional for greasing)
1 cup sugar
1 cup firmly packed brown sugar
2 tablespoons milk
1 teaspoon vanilla
2 eggs
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup rolled oats, uncooked
1 cup corn flakes crushed to about 1/2 cup
1 cup semi sweet chocolate chips
1/2 cup flakes coconut
Directions:
Preheat oven to 350 degrees.
Grease baking sheet.
Combine shortening, sugar, brown sugar, milk, and vanilla in large bowl. Beat at low speed with an electric mixer. Add eggs. Beat at medium speed.
Combine flour, baking powder, and baking soda, salt.
Gradually add shortening at low speed.
Stir in oats, corn flakes, chocolate chips and coconut.
Place 1/4-cup of dough (leveled with a knife) onto a baking sheet. Drop 3 inches apart.
Bake for 13-15 minutes or until lightly brown around edges and slightly soft in center.
Makes about 50 cookies.
