English Teacakes
Make a batch just for yourself!
INGREDIENTS:
1 3/4 cups sifted all purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1/4 cup soft shortening
1/4 cup soft butter or margarine
3/4 cup granulated sugar
1 large egg
3 tbsp milk
1/2 cup chopped citron, or candied lemon peel
1/2 cup raisins or currants
1 large egg white, slightly beaten
2 tbs granulated sugar for top
DIRECTIONS:
1. Sift together flour, baking powder and salt. Mix shortening, butter, sugar, and egg until creamy.
2. Add milk, citron, raisins, and flour mixture. Mix well and the refrigerate. Heat oven to 400.
3. Roll dough into walnut sized balls. Dip tops into egg whites, and then into sugar.
4. Place 2″ apart on greased cookie sheet, with sugar side up. Bake 12-15 minutes or until golden.
