Fabulous Finger Foods for Your Football Viewing Party

Whether you are hosting a huge college bowl game viewing party or settling in to watch the NFL playoffs with just a few close friends, you’ll want to have the following dishes on hand. Not only are these tasty recipes simple to prepare (leaving you more time to cheer for your team than cook for your guests), but they’re also hearty enough to forgo making multiple entrees.

CRAB STUFFED MUSHROOMS

Ingredients:

1 16 oz. pkg. medium to large mushrooms

1 (6 to 7 ounce) can lump crab meat, drained

3 green onions with tops, finely chopped

1/4 teaspoon dried thyme

1 tablespoon fresh lemon juice

1/2 cup freshly grated Parmesan cheese

1/2 teaspoon Dijon mustard

3/4 cup mayonnaise

1/2 cup crushed croutons

Paprika for garnish

Directions:

Preheat oven to 350 degrees.

In a medium bowl, combine crab meat, lemon juice, green onions, thyme, mustard, mayonnaise and 1/4 cup Parmesan cheese.

Remove stems from mushrooms. Fill the mushroom caps with crab mixture and place them in an ungreased shallow baking dish. Sprinkle tops with, crushed croutons, remaining Parmesan and paprika.

Bake for 15 to 20 minutes. Remove from oven, and serve immediately.

GOURMET BRIE AND SUN-DRIED TOMATO SPREAD

Ingredients:

2 tablespoons oil (from olive-oil-packed sun-dried tomatoes)

2 cloves garlic, minced

2 tablespoons minced olive-oil-packed sun-dried tomatoes

12 pitted black olives

1 teaspoon capers

1 wedge (8 ounces) or wheel of brie cheese

Crackers

Directions:

Heat oil and saute garlic.

Place garlic, oil, tomatoes, olives and capers into a food processor and pulse until evenly mixed.

Spread mixture over brie and serve with crackers.

Makes 8 servings.

MINI SAUSAGE BALLS

Ingredients:

2 pounds hot sausage

1 pound Cheddar cheese, grated

2 cups Bisquick

1/2 cup cold water

Directions:

Preheat oven to 400 degrees.

Mix sausage and cheese together.

Mix Bisquick and water together to form a soft dough.

Combine Bisquick mixture with sausage mixture.

Form bite-size balls and place on an ungreased cookie sheet.

Bake for 15 to 20 minutes.

Drain on paper towels.

Serve warm.

(Tip: The sausage balls can be made the night before and reheated prior to serving.)
