Fabulous Football Food

It’s the day many pro football fans have been waiting eight long months for—the kickoff of the new NFL regular season.

Let the tailgating begin!

Fire up the grill and kick up your party a few notches with these fabulous football dishes:

BARBEQUE STEAK

Ingredients:

2 to 4 well trimmed beef t-bone or porterhouse steaks, cut 1-inch thick

Salt

Ingredients for BBQ Rub:

2 tablespoons chili powder

2 tablespoons packed brown sugar

1 tablespoon ground cumin

2 teaspoons minced garlic

2 teaspoons cider vinegar

1 teaspoon Worcestershire sauce

1/4 teaspoon ground red pepper

Directions:

Combine rub ingredients and press evenly onto steaks.

Place steaks on grill over medium, ash covered coals.

Grill, uncovered 14 to 16 minutes for medium rare to medium doneness, turning occasionally.

Remove bones and carve steaks into slices or serve whole.

FIVE ALARM BURGERS WITH COOLING LIME SAUCE

Ingredients for Burgers:

1-1/2 pounds ground beef chuck

4 sesame seed sandwich rolls, split and toasted

1 cup mixed spring greens

Ingredients for Seasoning:

1 tablespoon curry powder

1 tablespoon Caribbean jerk seasoning

1 teaspoon salt

Ingredients for Lime Sauce:

1/2 cup reduced-fat mayonnaise

1/4 cup low-fat plain yogurt

1 tablespoon fresh lime juice

2 teaspoons grated lime peel

1/4 teaspoon salt

Directions:

Combine ground beef and seasoning ingredients in large bowl.

Shape meat mixture into four 3/4-inch thick patties.

Place patties on grill over medium, ash-covered coals.

Grill, uncovered, 13 to 15 minutes (over medium heat on preheated gas grill, covered, 13 to 14 minutes) until instant-read thermometer inserted horizontally into center registers 160 degrees.

While burgers are cooking, combine sauce ingredients in small bowl; set aside.

Spread sauce on rolls. Place a burger on bottom half of each roll; top evenly with greens and top with bun.

MAPLE BAKED BEANS

Ingredients:

3 tablespoons butter

1 cup finely diced onion

2 (28-ounce) cans baked beans

1 cup brown sugar

1 1/2 cups ketchup

2 tablespoons Dijon mustard

1/4 cup maple syrup

Directions:

Preheat oven to 350 degrees.

Saute onions in butter until tender.

Mix together beans, onions, ketchup, brown sugar, bourbon, mustard and syrup. Spoon mixture into a greased casserole dish. Cut bacon in pieces and place on top of beans.

Bake for 25 to 35 minutes.

Remove and serve hot.
