3 slices bacon, cooked crisp and diced, saving grease
1 egg
1/2 teaspoon salt
1/2 teaspoon sugar
1/8 dry mustard
2 tablespoons vinegar
2 cups potatoes, cooked and diced
2 eggs, hard-boiled
1 onion, chopped
In a bowl, mix the single raw egg. Slowly add the vinegar and seasonings. Gradually add in bacon fat. Cook in a saucepan until thick. Place the potatoes in a bowl. Sprinkle hot mixture over potatoes. Mix in remaining ingredients and serve warm
