I love to make Christmas cookies. It is a family tradition to make cookies on the day we put the tree up, the day we take it down, and at the holiday dinners. Who does not love cookies and hot chocolate on a cold winter’s night? I am sure there are some lucky ones out there that don’t crave the holiday sugar but I am not one of them. In addition to all the cookies I make for my family, I also make cookies for neighbors.
One of my favorite recipes is this chocolate chip recipe. The cookies taste great and no one will know they are low fat. I suggest subbing the whole wheat flour for whole wheat white flour to give it a smoother texture. I have to admit I am not a fan of whole wheat flour but it is not overpowering in this cookie. Keep the butter. Butter in moderation is not bad for you.
Low Fat Chocolate Chip Cookies
Ingredients:
1/2 cup whole-wheat flour
3/4 cup all-purpose flour
1/4 tsp baking soda
1/4 tsp salt
4 tbsp butter, melted
2 egg whites
1 tsp vanilla extract
3/4 cup firmly-packed light brown sugar
1/2 cup semisweet chocolate chips
Preparation:
Preheat oven to 350 degrees. Line two cookies sheets with parchment paper or a silicone mat.
In a medium bowl, whisk flour, baking soda and salt. In a large bowl, whisk together the egg whites, butter, and vanilla; stir in the brown sugar until smooth. Gradually add in the flour mixture and mix well. Stir in chocolate chips.
Drop dough by the tablespoon onto cookie sheets about 2 inches apart. Bake one cookie sheet at a time for 10-12 minutes.
Yields 24 cookies.
