Fiesta Style Corn Salad
15-ounce can dark red kidney beans, drained and rinsed
10-ounce package frozen whole kernel corn, thawed
1 medium tomato, peeled, seeded, and chopped
1/4 cup scallions, sliced
1 jalapeno pepper, minced
1/4 cup chili sauce
3 tablespoons vegetable oil
2 tablespoons apple cider vinegar
1 teaspoon of chili powder
1/2 teaspoon cumin
1/4 teaspoon salt
1/8 teaspoon pepper
Lettuce leaves
In a bowl, mix the kidney beans, corn, tomato, scallions, and jalapeno pepper. In a separate bowl, mix the remaining ingredients excluding lettuce. Pour over vegetables, tossing to mix. Chill and then serve on the lettuce.
