Freezer Cooking Egg Muffin Sandwiches

Don’t you just love having different things on hand for breakfast? Cereal can be the standard for most busy families in the morning, but cereal can get pretty expensive. Plus, sometimes it is nice to have a good hot breakfast. One of our favorite things to eat on the go are breakfast sandwiches, you know the ones made on English muffins?

Well, most people who eat these either stop off at the diner or fast food restaurant, or they buy those frozen ones that you can microwave. Again, these things get expensive. So, why not make and freeze our own? Who says freezer cooking isn’t for breakfast?

So, the other morning, while everyone else was still getting up, I decided to make a dozen egg muffin sandwiches for the freezer. I had purchased two 6-packs of the good English muffins in a buy one get one free sale, so I already had them on hand.

First I fork separated the muffins and started toasting them in batches. I had some butter spread on hand, so I could butter them as they came out. The bottoms I placed on a cookie sheet, and the tops I placed on a plate.

I then placed one slice of american cheese on each bottom half. Then it was time to start the eggs.

While traditional egg sandwiches often call for fried eggs, I find that scrambling them gives better results for the freezer. The whites can get a bit rubbery after they are frozen. Scrambling the eggs solves this problem. I scrambled a dozen eggs in two batches, using my electric griddle. Then I simply spooned eggs onto each muffin bottom (on top of the cheese). I topped each sandwich with a muffin top and then placed the cookie sheet in my freezer for about an hour.

Next, I took the sandwiches out, wrapped each one in a paper towel, and then placed them in two freezer bags. When it comes time to eat a sandwich, it can be taken out of the bag and micro-waved in the paper towel for a minute or two.
