Fried Brown Rice
Much better for you than the restaurant version.
INGREDIENTS:
1 cup brown rice, cooked
2 1/4 cups water
3 tbs olive oil
1 medium onion, chopped
2 cloves garlic, crushed
3 large eggs, slightly scrambled
1 cup frozen mixed vegetables
3 medium green onions, chopped
3 tbs soy sauce
10 drops sesame oil
DIRECTIONS:
1. In large skillet or wok, heat olive oil over med-high heat – add onions and garlic, cook until soft.
2. Push onions and garlic to the side, add eggs, and cook, stirring constantly.
3. Add vegetables and green onions – continue stirring. Add rice, soy sauce and sesame oil – heat through.
Prep: 5 minutes
Cook: 15 minutes
Serves: 6
