Fruit Flavored Fudge

Earlier today I mentioned that I was over Christmas cookies. I have eaten more than my share for the rest of the year and once my daughter and I deliver the rest of the tins we put together for friends and business associates our house will officially be cookie-free.

The only problem… it’s now a fudge-filled zone. Blame my neighbor. She just dropped off some fabulous homemade fudge (see recipes below). And not just any delicious chocolate fudge (that would have sufficed), nooooo she had to concoct fudge infused with cherries and eggnog.

Oh how I love the holidays.

CHOCOLATE CHERRY FUDGE

Ingredients:

1/2 cup (1 stick) butter

3/4 cup whipping cream

2 cups sugar

12 ounces semisweet chocolate, coarsely chopped

1 jar (7 ounces) marshmallow creme

1 cup slivered almonds, chopped

1 cup dried cherries, chopped

1 teaspoon almond extract

Directions:

In a heavy saucepan, combine butter, cream and sugar. Bring to a full rolling boil over medium-high heat; stirring constantly. Reduce heat to medium and continue to boil. Stir frequently for 8 to 10 minutes.

Remove from heat; add chocolate and marshmallow creme; stir until smooth. Add, almonds, cherries, and almond extract. Mix well. Pour mixture into a 9-inch square pan lined with buttered foil. Chill; cut into 1 1/2-inch squares.

EGGNOG FUDGE

Ingredients:

1/2 cup butter

3/4 cup eggnog

2 cups sugar

1 1/4 cups (10 ounces) white chocolate bars, broken into pieces

1/2 teaspoon ground nutmeg

1 7 ounce jar marshmallow crème

1 cup chopped pecans

Directions:

In a heavy saucepan, combine butter, eggnog, and sugar. Bring to a full rolling boil over medium-high heat, stirring constantly. Reduce heat to medium, and continue to boil. Stir frequently for 8 to 10 minutes.

Remove from heat; add chocolate and nutmeg; stir until smooth. Add marshmallow creme, and pecans. Mix well. Pour mixture into a 9-inch square pan lined with buttered foil. Cool completely; cut into 1 1/2-inch squares.
