When you think of traditional Valentine’s Day desserts, chocolate is usually the first thing that comes to mind. However, in my family, Love Day is always celebrated with fruit (and a little chocolate). My mother is a huge fan of fresh fruit and would typically serve fruit tarts to us on Valentine’s Day. I started doing the same when I became a mother, and to this day, my daughter would prefer to devour a bowl of fresh strawberries than chocolate pudding.
If you have fruit lovers in your family, then consider making the following dishes to serve with love this Valentine’s Day:
SUPER SIMPLE CHERRY COBBLER
Ingredients:
2 (21-ounce) cans cherry pie filling
1 (18.25-ounce) package yellow cake mix
1/2 cup butter, melted
1/3 cup chopped pecans or walnuts
Directions:
Place pie filling in a greased slow cooker.
Combine cake mix and butter, and sprinkle over filling. Add nuts.
Cover and cook on low for 1 1/2 to 2 hours, depending on the size of the crock pot.
Serve warm in bowls topped with vanilla ice cream.
CANDY APPLE BREAD PUDDING
Ingredients:
4 cups day old white bread, cubed
3 red apples, skin-on and diced
1 tablespoon butter
2 teaspoons cinnamon
3 tablespoons melted butter
4 eggs
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/2 cup sugar
3 cups milk
1 1/2 teaspoon vanilla
1/2 cup caramel candy pieces
Directions:
Preheat oven to 350 degrees.
Arrange bread cubes in a 1 1/2 quart baking dish and drizzle with melted butter.
In a medium pan, saute the diced apples with 1 teaspoon cinnamon and 1 tablespoon butter until softened about 4 to 5 minutes.
In a bowl, combine eggs, remaining cinnamon, nutmeg, and salt, and stir slightly. Dissolve sugar in the milk and slowly stir in the eggs and vanilla.
Pour mixture over the bread cubes and let soak for 2 to 3 minutes.
Sprinkle apples and caramel candy over the top and gently mix.
Bake for 60 minutes.
Serve warm with vanilla ice cream or whipped cream.
