This is my daughter’s first year attending all-day school. I knew she would do well academically and socially. However, I was unprepared for how hungry she would be upon returning from seven hours of class. The kid eats like a rhino when she gets home, despite the fact that I fill her lunchbox to the brim each morning.
After three weeks of meeting a famished 6-year-old in the school parking lot, I devised a new after school snack routine. Each night my daughter and I choose a fun recipe to make together, so when 3:30 p.m. rolls around the following day she has a tasty treat to enjoy. What’s more, the snack is even more appealing because she had a hand in making it.
Here are some of her favorites:
GRILLED GREATNESS
Ingredients:
1 large flour tortilla
2 tablespoons cream cheese
2 tablespoons peanut butter
1/2 cup chocolate chips
Directions:
Spread peanut butter on half of the flour tortilla shell and softened cream cheese on the other half. Sprinkle with chocolate chips. Grill on direct heat for 2 minutes on each side. Let cool before serving.
M&M MONSTER COOKIES
Ingredients:
1 cup sugar
1 cup firmly packed brown sugar
1 cup peanut butter
1/2 cup unsalted butter, softened
3 eggs
4 1/2 cups quick cooking rolled oats
2 teaspoons baking soda
1 cup semi-sweet chocolate chips
1 cup M&Ms
1 cup chopped peanuts
1/2 cup raisins
Directions:
Heat oven to 350 degrees.
In a large bowl combine sugar, brown sugar, peanut butter and butter, beat until light and fluffy.
Add eggs, one at a time, beating well after each addition.
Add oats and baking soda, mix well.
Add chocolate chips, M&Ms, peanuts and raisins.
Drop heaping tablespoons of dough on ungreased cookie sheet.
Bake for 11 to 14 minutes or until light, golden brown.
Cool 2 minutes, remove from cookie sheets and serve.
