According to food safety experts, if you have any leftover hard-boiled eggs from Easter in your refrigerator, you should consume them by the end of today. However, if you peeled your eggs on Easter and let them sit in the fridge since then, you need to toss them in the trash, regardless of how they look or smell.
The folks at the Egg Nutrition Center also warn against eating hard-boiled eggs that you may have used in outdoor hunts that lasted more than two hours. In other words, if it took your kids more than a couple of hours to find hidden hard-boiled eggs in your yard on Easter Sunday, you should have never put them back in the refrigerator and you certainly shouldn’t be eating them now.
That said, if you boiled your eggs a week ago, kept them in their shells, and in the refrigerator until today, then they are still safe to have fun with. And by fun I mean do more than peel off the shells and shove them in your mouth. Rather, consider making this spiced-up version of classic egg salad courtesy of The Cozy Kitchen. CURRY EGG SAALD
Ingredients:
1/3 cup mayonnaise
1 tablespoon fresh lime juice
1 1/2 teaspoons curry powder
1 1/2 teaspoons Dijon mustard
1/4 teaspoon salt
Pinch of cayenne
6 large hard-boiled eggs, chopped
1 cup diced Granny Smith apple
1/4 cup finely chopped red onion
Your favorite bread
Lettuce for garnish
Directions:
Mix together the mayo, lime juice, curry powder, mustard, salt and cayenne.
In a separate bowl, add together the chopped eggs, apple and onion.
Pour the curry dressing over top and gently stir everything together.
Serve on toasted bread with lettuce, or just eat wrapped up in lettuce cups.
