Sadly, summer is fading away and soon (if it hasn’t happened in your home already) families will return to the daily grind of preparing for school and work. This, of course, means that parents everywhere will soon be juggling mealtime with kids yelling for help finding a lost notebook, permission slip or sock.
So how can you change your youngest child’s soiled diaper, make sure your oldest has his backpack together, get breakfast on the table, and pack lunchboxes all before the school bus rolls up in front of your house?
Try these portable meals that are great for families on the go. The first recipe features German bratwurst, which serves as a hearty substitute for traditional breakfast sausage in a handy breakfast burrito you can eat on the go. The other recipe is for a Turkey Wrap that gets a boost from bacon, avocado and a flavorful garlic aioli.
EGG AND BRATWURST BURRITO
Ingredients:
1 dozen eggs
1 cup milk
Salt and pepper
1 cup chopped green pepper
1 cup chopped red pepper
1 cup diced onion
4 tablespoons butter
4 cooked bratwursts, sliced (leftover grilled brats work best)
3 cups shredded cheese
Salsa
Sour cream
Directions:
Beat eggs and milk together. Season with salt and pepper.
In a very large skillet melt butter. Add onions and peppers. Saute for a few minutes until soft. Add eggs. When eggs start to cook, add brats and stir.
Divide the warm egg mixture on six tortillas.
Top with cheese, salsa, and sour cream.
TURKEY, BACON, AND AVOCADO WRAP
Ingredients:
2 cups mayonnaise
1 bulb garlic
salt and pepper
4 pieces of bacon
3 tablespoons brown sugar
lettuce
avocado
tomatoes
12″ flour tortillas
Directions:
For Aioli: Cut the non-root end off a bulb of garlic and rub with olive oil. Wrap in aluminum foil and roasted in a 350 degree oven until tender. Remove from oven and cool. When cool squeeze garlic into food processor and add mayonnaise. Blend well with a pinch of salt and pepper too.
For the Bacon: Lay bacon on a baking sheet and sprinkle with brown sugar. Place in a 350 degree oven and cook until desired crispiness. Remove and cool.
Assembly: Layer meat and vegetables on flour tortilla; wrap and slice in half.
