Gingered Chicken
An Asian style chicken dish that’s not so authentic that picky eaters would shy away. This is great if someone in your household has a Chinese take-out craving that needs a fix! Serve with sticky rice.
INGREDIENTS:
4 medium chicken breasts
1/3 cup plain flour
1 tbs olive oil
1/2 cup unsweetened pineapple juice
2 tbs honey
2 tbs soy sauce
1 tsp ground ginger
2 tsp minced garlic
DIRECTIONS:
1. Cut breasts into 1 inch square pieces and coat in flour.
2. Heat oil in pan over medium-high heat.
3. Cook chicken 3-4 minutes per side, until lightly browned on the outside.
4. Meanwhile, mix pineapple juice, honey, soy sauce, ginger and garlic. Whisk well until all ingredients are incorporated.
5. Pour over the chicken in pan.
6. Cook, stirring constantly, until juices run clear when chicken is pierced and the sauce is slightly thickened.

Cook: 15 minutes
