Earlier, I wrote an article about how to glaze your ham. Now let’s look at what to glaze it with! Traditionally, hams are often glazed in some type of mustard or brown sugar glaze. However, the options are limitless and really, you can be as creative as you want. Here are a few suggestions from the traditional to the very unique.
Mustard Sauce
1 tablespoon all-purpose flour
3/4 cup white sugar
1 tablespoon mustard powder
1 cup milk
2 egg yolks
1/2 cup tarragon vinegar
Directions:
In a small bowl, mix together the flour, sugar and mustard powder until evenly blended. Whisk together the milk and egg yolks in a saucepan, and slowly whisk in the mustard mixture. Stir in the vinegar. Whisking constantly, bring the mixture to a boil over medium heat, reduce heat to low, and simmer until thickened.
Honey Glaze
1/4 cup dark corn syrup
2 cups honey
2/3 cup butter
Directions:
Note: It is helpful to line the pan with foil before baking for easier clean up!
In the top half of a double boiler, heat the corn syrup, honey and butter. Keep glaze warm while baking ham. Baste ham every 10 to 15 minutes with the honey glaze. During the last 4 to 5 minutes of baking, turn on broiler to caramelize the glaze. Remove from oven, and let sit a few minutes before serving.
Golden Raising Glaze
1/2 cup golden raisins
1/2 cup rum (not rum flavoring)
1/2 cup apple jelly
1/2 cup orange juice
2 tablespoons corn starch
2 tablespoons brown sugar
1 tablespoon dry mustard
Directions:
Combine apple jelly, orange juice, raisins, and rum in a small sauce pan. Cook over low heat until smooth and well combined. In a separate bowl mix dry mustard, brown sugar, and corn starch. Add mixture to sauce pan. Stir to combine. Cook until thickened. Remove from heat. Spread glaze on ham during the last 30 minutes of baking. Reapply during the last 15 minutes, if desired. Serve extra glaze along side of ham.
