Gluten Free Christmas Cakes

Have you made your Christmas cake yet? I know some people who have. Somehow I’ve never got around to it. I’m usually one who makes it in the last week. Of course the other reason is I adore fruit cake so the less time it is around the better.

This is my sort of recipe, because it is so easy. It’s an all in together recipe that came from a dear friend who invariably caters to me, her gluten free friend. Thanks, my friend.

Gluten Free Fruit Cake

2 generous cups Gluten Free S R Flour

2 cups of Mixed Fruit

1 and a half cups Orange Juice

1/4-1/2 cup Slivered Almonds

1 Beaten Egg

Slosh of Tawny Port (I’ll leave that to your discretion. I’m always heavy handed with such things)

1 Tablespoon Sugar

Method

Combine all ingredients in a large bowl, and mix well.

Bake, 320 degrees F (or 160 C) for 1 and a half hours.How easy is that!

Cool slightly in tin before turning it out.

Below is the gluten free Christmas Cake I usually make. Again it’s really simple

Gluten free Christmas Cake

Ingredients

12 ounces gluten free self raising flour

4 ounces margarine

4 eggs

I cup brown sugar

Half teaspoon bi-carb soda

1 teaspoon mixed spice

1 cup water

1 teaspoon baking powder

2 pounds of mixed fruit and cherries (The original recipe which came from a friend of my mother’s had 2 pounds but because I like my fruit cakes extra fruity, I add around another half pound of fruit that includes some mixed peel. It’s up to you. You could also add dried apricots in the fruit mix)

a generous slosh of brandy. (I have been known to grab whatever’s handy if I don’t have brandy which has included sherry or Marsala. You can leave the spirits out if you want and add a slurp more orange juice.

Method

Put water, fruit, sugar, margarine, spices and carb soda in a large saucepan. Bring to co boil and simmer for 3-5minutes. Cool.

Add the brandy, mix well and leave sit overnight to let the flavors mix.

Next day add well beaten egg and GF flour and baking powder. Mix well.

Bake at 300 degrees F for 2 hours. Test after 1 and a half. Cake is cooked if skewer comes out cleanly. Do not overcook.
