If you have a gluten free person in your family it sometimes requires a bit of extra thought too come up with ideas for supper, morning or afternoon teas or to go in the school lunch box. Here are a couple of suggestions.
Unfortunately many gluten free biscuit and slice recipes use honey which is not good for anyone allergic to it as I am. These two are honey free as well as gluten free.
I’m sure your family will enjoy both these simple to make recipes. Children might even be able to help make them.
Golden Crackles
Ingredients
4 ounces margarine
3 tablespoons golden syrup
2 cups Gluten free SR flour
Half teaspoon baking powder
Pinch of salt
1 teaspoon bi carb of soda
1 tablespoon ground ginger
3 cups caster sugar
3 cups gluten free corn flakes
1 beaten egg
Method
Lightly grease two baking trays with margarine.Heat oven.
Melt margarine with syrup over a low heat. Cool.
Combine flour, salt, bi carb of soda and ginger in a bowl. Mix in castor sugar and corn flakes. Add egg and the cooled margarine and syrup. Mix well.
Place teaspoonfuls of mixture on prepared trays about 2 inches apart. Bake in a moderately slow over – around 320 degrees F for 20 minutes. Cool slightly. Remove from trays and cool on wire racks.
This recipe will make about 24-25 Golden Crackles.
Chocolate Squares
Ingredients
4 ounces margarine
1 cup coconut
1 cup gluten free SR flour
Half teaspoon baking powder
1 tablespoons cocoa
Half cup caster sugar
Method
Grease a slice tin.
Melt margarine and pour this over all dry ingredients. Mix together well.
Pour mixed ingredients into slice tin. Bake in a moderate oven 20 minutes.
Ice with chocolate icing while still warm but do not attempt to cut into squares until cold.
