Whether your child is graduating from high school, middle school or kindergarten, the following delectable desserts are excellent ways to celebrate the milestone.
The Simple Seven Layer Bars and Lime Pound Cake recipes are simple to make and can easily be doubled or tripled in case you are hosting the entire class of 2009.
SIMPLE SEVEN LAYER BARS
Ingredients:
1 1/2 cups unsalted butter (3 sticks), melted
4 1/2 cups graham cracker crumbs
2 (14-ounce) cans sweetened condensed milk
2 1/2 cups chocolate chips
2 1/2 cups butterscotch chips
1 1/2 cups chopped pecans
1 1/2 cups shredded coconut
Directions:
Preheat oven to 350 degrees.
Place butter in an 11 by 17-inch baking pan. Melt butter in oven.
Remove pan from oven and carefully tilt pan to spread melted butter around.
Sprinkle graham cracker crumbs over melted butter.
Pour sweetened condensed milk over the crumbs. Top with remaining ingredients.
Bake 25 minutes.
Cool, then cut into bars.
LIME POUND CAKE
Ingredients for Cake:
3 cups all-purpose flour
Pinch salt
3 sticks unsalted butter, at room temperature
2 1/2 cups sugar
2 teaspoons grated lime zest
5 large eggs, at room temperature
3/4 cup lime soda
Ingredients for Glaze:
2 cups powdered sugar, sifted
2 tablespoons unsalted butter, melted
2 tablespoons lime soda
Directions:
Preheat oven to 350 degrees.
Grease and flour a 10-inch Bundt pan.
To make cake: In a medium bowl, sift together flour and salt; set aside. In a large bowl, with electric mixer on medium speed, beat butter, sugar, and lime zest until pale and light, about 5 minutes. Add eggs one at a time, beating well after each. Gradually add flour mixture, just until blended. Stir in soda. Pour batter into prepared pan and bake until a toothpick inserted in center comes out clean, about 1 hour and 15 minutes. Cool cake completely in pan on a rack before inverting onto a plate.
To make glaze: Stir together powdered sugar, butter and soda; add lime juice or sugar if needed. Spoon glaze over cake. Garnish with lime zest, before serving.
