Graduation Party Recipes

With graduation party season well underway, you may be looking for a recipe that is easy to prepare, can feed an army of people, and more importantly, looks and tastes great.

The following recipes are ideal for graduation parties or family potlucks, which call for eye and palette pleasing dishes:

CRAB STUFFED MUSHROOMS

Ingredients:

1 16-ounce container of large mushrooms

1 (7-ounce) can lump crabmeat, drained

3 green onions with tops, finely chopped

1/4 teaspoon dried thyme

1 tablespoon fresh lemon juice

1/2 cup freshly grated Parmesan cheese

1/2 teaspoon Dijon mustard

3/4 cup mayonnaise

1/2 cup crushed croutons

Paprika

Directions:

Preheat the oven to 350 degrees.

In a medium bowl, combine crabmeat, lemon juice, green onions, thyme, mustard, mayonnaise and 1/4 cup Parmesan cheese.

Remove stems from mushrooms. Fill the mushroom caps with crab mixture and place them in an ungreased shallow baking dish. Sprinkle tops with, crushed croutons, remaining Parmesan and paprika.

Bake for 15 to 20 minutes.

Remove from oven, and serve immediately.

CHILI RICE

Ingredients:

1 cup chopped onion

1/4 cup butter

4 cups cooked rice

2 cups sour cream

1 cup cottage cheese

1 large bay leaf, crumbled

1/2 teaspoon salt

1/2 teaspoon pepper

3 cans (4 ounces each) green chiles, chopped

2 cups (8 ounces) shredded Cheddar cheese

Parsley, chopped

Directions:

Preheat oven to 375 degrees.

Lightly grease a 12 by 8-inch baking dish.

In a large saucepan, saute onion in butter until translucent. Remove from heat and stir in hot rice, sour cream, cottage cheese, bay leaf, salt and pepper. Mix well.

Layer half of rice mixture in prepared dish. Sprinkle all of chiles and half of cheese over rice. Top with remaining rice and cheese. Sprinkle top with parsley.

Bake for 25 to 30 minutes.

Remove from oven and serve immediately.
