Graham Cracker Cookies/Bars

Paula Deen made this cookie-Bar recently on her show—it looked delicious. And best of all, it was a snap to make! Most of the ingredients are ones you might even have laying around the house. And if you have little ones at home, they can help you make this. Children will love helping to mix the icing, lay the graham crackers down, and spread the topping.

For this recipe you’ll need:

1 ½ sticks butter

1 cup sugar

1 egg

½ cup milk

24 graham crackers, divided

1 cup sweetened flaked coconut

1 cup chopped pecans

For icing:

2 cups powdered sugar

4 TB softened butter

½ tsp. vanilla

3 TB milk

To make this recipe:

In a heavy-bottom pan, add the butter and sugar. Add the egg and stir. Allow the mixture to come to a boil

Line a 13x9x2 dish (sprayed with cooking spray) with graham crackers (you’ll need to break a few of the crackers apart to fit them).

Take 8 more graham crackers, place in food processor and process until finely ground. Set aside.

Take the sugar mixture off the heat and add 1 cup sweetened flaked coconut and 1 cup chopped pecans. Add the graham cracker crumbs from the food processor to the mixture and stir. Pour over the graham crackers in the dish and spread evenly.

Layer another row of 7-8 graham crackers over the filling.

Make the icing by mixing the powdered sugar, butter, milk, and vanilla with an electric mixer until smooth. Carefully spread the icing mixture over the top layer of graham crackers (use an offset spatula if you have one) and refrigerate until it is cold enough to cut (several hours).

These are very rich cookies, so you’ll want to cut them small—one batch will make about 24 cookies/bars.

Tips: Make sure your butter and sugar are not too hot when you add the egg or it’ll scramble.
