Greek Feta Cheese Pie

This is a truly delicious recipe. Tweaked to my liking, it is fluffy, moist, and divine. It closely resembles a crust less quiche, but the texture is smoother. It easily lifts out of the pan into squares and can be eaten any time of day. My husband prefers it in the morning with tea or coffee. Be sure to see my Tips at the bottom of the page.

For this recipe, you’ll need:

Three (8oz) packages Feta Cheese (you’ll use 2 ½ packages – 20 ounces)

2 Cups Plain Yogurt (If you have Mountain High brand, it works well. Otherwise, try to find Greek yogurt or use your favorite brand that isn’t too watery)

4 eggs

1 stick softened butter

1-cup All Purpose flour

2-¼ TB baking powder

2 TB olive oil, or cooking spray

To Make:

First, you’ll need to line a strainer with cheesecloth or paper towels. Place the strainer over a pan or bowl and pour the yogurt into the strainer. Allow the yogurt to strain for at least one hour. Three hours works best.

Preheat the oven to 350 degrees.

In a large bowl, use an electric mixer and mix together the eggs and butter until smooth, about two minutes.

Add strained yogurt and mix until combined.

Add flour and baking powder and mix until incorporated.

Crumble the feta and add it in small batches to the mix. When it’s all in, continue mixing on high speed for about 6 minutes, until it’s creamy. There will still be some pieces of feta and that’s fine.

Either spray a 9×11 inch. Baking pan with cooking spray or brush it with olive oil. Pour in mixture and distribute evenly.

Bake in preheated oven for 50-55 minutes until set and golden on top. Remove from oven and allow to sit at least 10 minutes before serving. Cut into squares or rectangles and enjoy.

Tips:

The flavor with all the feta can be a bit too salty. I suggest using TWO (8oz) packages of Feta cheese and 4-6 ounces of cottage cheese as an alternative to mellow out the flavors. You won’t be able to tell there is cottage cheese in there, but the flavor will be lighter.

This recipe can easily be cut in half. Just pour it into an 8×8 dish.

You can also make this dish in a 10-inch round dish.
