A fritter? With green onion? What’s that, you ask? A fritter is pretty much a small ball of fried heaven. They’re delicious, they’re fast to make, and you can add just about anything to them. If this is your first time making fritters, this is a great recipe to start with. It uses pancake batter. What’s easier than that?!
For this recipe you’ll need:
1 Cup prepared pancake mix (dry)
½ Cup water
1/8 tsp. cayenne pepper
¼ tsp. black pepper
8 green onions (white and green part) chopped into ½ inch pieces
Enough vegetable oil to cover one-inch up the side of the pan.
To make this recipe:
Preheat your oil on medium to medium-high heat.
Mix the pancake mix, water, cayenne pepper, black pepper and green onions in a bowl. Stir gently until just combined. Using two spoons, drop the batter one fritter at a time, into the hot oil. You’ll need to turn these once during cooking. They’ll only take about 2 minutes to cook, so don’t walk away! Remove them when they’re golden brown and sprinkle with a bit of salt. Enjoy!
