Greens and Potato Croutons
2 potatoes, peeled and cubed
2 tablespoons olive oil
1/2 teaspoon garlic salt
1/8 teaspoon pepper
10-ounce bag mixed salad greens
2 hard cooked eggs, chopped
1/2 cup grated parmesan cheese
1 cup of creamy parmesan salad dressing
Toss potatoes with olive oil and garlic salt and place on a cookie sheet. Roast them at 400 degrees for 35 to 45 minutes or until they are brown and crispy. Drain on paper towels and let cool about 10 minutes. Combine remaining ingredients in large bowl and toss gently. Top with potato croutons and serve.
