Ground Beef with Rice and Tomatoes
1 pound of lean ground beef
2 large sweet onions, chopped
1/2 green pepper, chopped
1/2 cup celery, chopped
1 cup uncooked rice
28-ounce can diced tomatoes with juice
1 teaspoon of salt
1/2 tablespoon black pepper
4 tablespoons ketchup
Sauté beef and onion till onion cooked, then add other ingredients. Cover and simmer 1/2 hour, stirring occasionally, until rice is cooked and liquid is absorbed.
