Grown-Up Grilled Cheese

If you’re like me, you loved grilled cheese growing up. I ate it all the time and nobody made it better than my mom. I realize now it was because of all the butter! She had a way of making sure every inch was covered with at least a little bit of it, resulting in a truly delicious sandwich. To this day nothing is better than a good grilled cheese sandwich and a steaming hot bowl of tomato soup. It comforts my soul, eases a bad day, and prepares me to face the day ahead. But now, instead of using cheese wrapped in plastic to make my sandwich, I combine three distinctly different cheeses. Here’s the yummy recipe, tweaked a bit for the grown-up palate. The cheeses melt together to create a gooey, creamy sandwich that’ll have you feeling like a kid again in no time.

Ingredients:

1.Two slices sourdough bread (can substitute your favorite bread such as white, wheat, or French)

2.1 slice (or about 1 ounce) mozzarella cheese

3.1 slice (or about 1 ounce) cheddar cheese

4.1 slice (or about 1 ounce) provolone cheese

5.Approximately 2 teaspoons butter or margarine

To Make:

1.Preheat a medium skillet on low

2.Top one slice of bread with cheeses.

3.Place other slice of bread on top. Spread 1 tsp. (or more to taste) butter or margarine on top piece of bread.

4.Place sandwich in pan, buttered side down, and spread remaining butter or margarine on other slice.

5.Cook till golden on one side, then flip with a spatula and finish cooking until both sides of the bread are golden and the cheese is melted.

Let the sandwich cool a bit before cutting or the cheeses will ooze out. Cut diagonally and dip into your favorite soup. You can also enjoy this tasty lunchtime favorite alone or with potato chips. Grilled cheese makes a deliciously simple dinner as well.
