Guacamole Tomato Salad
6 medium tomatoes, cored and finely chopped
2 teaspoons salt
1 small onion, finely chopped
1 can green chilies, diced
2 teaspoons lemon juice
2 avocados, mashed
4 bacon slices, crisp cooked and crumbled

Sprinkle the insides of the tomatoes with 1/2 teaspoon salt. Turn the tomatoes upside down on paper towels to drain. Place in refrigerator and chill. Add onion, green chilies, lemon juice, and the remaining salt to the tomatoes, mixing, and chilling. Before serving, mash the avocado and then stir into the tomato mixture (do not allow to stand, or the avocados will darken). Place the tomatoes on the bed of lettuce. Fill tomatoes with guacamole and top them with the crumbled bacon. Serve immediately.
