Hash Brown Potatoes
Homemade hash browns make any breakfast better.
INGREDIENTS:
4 medium potatoes
2 tbs finely chopped onion
1/4 tsp salt
1/8 tsp pepper
1/4 cup margarine or butter
DIRECTIONS:
1. Wash and peel potatoes. Shred enough for 4 cups. Rinse, drain and pat dry.
2. Gently mix onion and seasonings into potatoes.
3. Using a 10-inch skillet, melt margarine, then pack potatoes into skillet, leaving a half-inch spare around the edge.
4. Cook over medium-low heat until bottom is browned, about 15 minutes. Cut potatoes into fourths and turn each. 5. Cook until bottom is browned, about another 12 minutes.

Cook: 30 minutes
