Have Salmon for Dinner Tonight

Salmon is a favorite fish in my house. In fact, it is one of the only types of fish we make. It is also very healthy for you and great if you are on a diet. It’s low in fat, high in protein and high in omega-three. Salmon is also known to be a fat burning food. It boosts your metabolism!

Here are two recipes we love in our home.

Asian Low Fat Salmon

Ingredients:

2 tbsp maple syrup

1 tbsp freshly grated ginger

1/4 cup reduced-sodium soy sauce

2 tbsp chopped scallions

1 tbsp lime juice

4 5-ounce salmon fillets

Directions:

Combine maple syrup, ginger, soy sauce, lime juice and scallions in a large resealable plastic bag. Add salmon fillets. Seal, pressing out excess air, and refrigerate for 20 minutes.

Preheat broiler or grill. Coat broiler pan with nonstick cooking spray.

If grilling, spray grill before preheating.

Remove salmon from plastic bag, reserving marinade, and place on broiler rack or grill. Cook for 10 minutes until fish flakes easily. Brush with marinade once or twice during cooking.

Salmon and Asparagus

Ingredients:

4 sheets 12-inch by 18-inch foil wrap

4 5-ounce salmon fillets

1 pound asparagus

1/4 cup lemon juice

Freshly ground black pepper

Directions:

Preheat oven to 450 degrees.

Break ends off asparagus spears and divide spears into four portions.

Spray center of each foil sheet with nonstick cooking spray. Place one salmon fillet in the middle of each sheet, along with a portion of asparagus. Drizzle with lemon juice and add fresh ground black pepper.
Bring up sides of foil and fold the top over twice. Seal the ends, leaving room for air to circulate iside the packet. Place on a cookie sheet and cook in oven for 15-18 minutes, until salmon is opaque.
