Hawaiian Style Gazpacho
2 cups fresh pineapple, cut into 1/4-inch pieces
2 cups pineapple juice
2 tablespoons extra virgin olive oil
1 seedless cucumber, cut into 1/4-inch cubes
1 red bell pepper, seeded and cut into 1/4-inch cubes
1 onion, cut into 1/4-inch cubes
2 garlic cloves, minced
1 jalapeno pepper, seeded and minced
3 tablespoons fresh limejuice
2 tablespoons fresh parsley, chopped
Salt and pepper to taste
Process 1/2 cup of pineapple with juice and oil in a blender. Transfer puree to a medium bowl with remaining ingredients. Season the soup with salt and pepper. Refrigerate until ready to serve.
