Of all the vegetables in the produce aisle, I would have assumed the cauliflower had the least nutrition. For some reason it always appeared to me that cauliflower was filler or garnish. It just didn’t look terribly healthy to me. In fact, it looks like a replica of a brain if you look close enough. No? Perhaps, I’ve watched too much late night TV. However, to my surprise cauliflower is actually good for you. I realize that isn’t too surprising but it exceeded my expectations on some of the benefits.
*Cauliflower is an excellent source of Vitamin C, manganese, and many antioxidants which help reduce your risk of certain diseases and cancer.
*Cauliflower contains high doses of Vitamin K and omega-3 fatty acids which have an anti-inflammatory effect on the body.
*Cauliflower contains dietary fiber which helps keep the digestive system healthy. It also contains glucoraphin which helps protect the stomach lining.
*Cauliflower contains B vitamins.
NOTE: Keep in mind that cauliflower contains a moderate amount of uric acid. Uric acid can lead to an arthritis called gout. So, if you already have gout or high levels of uric acid then speak to your doctor.
Smashed Cauliflower
Ingredients
1 large head cauliflower, cut into florets
3 cups chicken broth
3 tablespoons butter
1 cup shredded Vermont white Cheddar cheese
1/4 cup grated Parmesan cheese
salt and pepper to taste
Directions
1.Bring cauliflower and chicken broth to a boil in a large saucepan over high heat. Reduce heat to medium, cover, and simmer for 10 minutes. Uncover the saucepan and increase heat to medium-high. Allow cauliflower to simmer until soft and the cooking liquid has reduced by half, about 10 minutes.
2.Remove cauliflower from the heat, and add the butter, Cheddar cheese, and Parmesan cheese. Mash with a potato masher until the cheeses have melted and the cauliflower is smooth, then season to taste with salt and pepper.
