Healthy Muffins Recipe Book

I could eat a muffin every morning. No, that’s not true. I could eat two muffins every morning. Two muffins and a nice hot cup of coffee sounds like a great way to start the day to me. I’m fine with eating yummy veggies and salads all day but morning time is bakery time in my mind. That does not quite fit in with a healthy lifestyle when an average muffin can have at least half the fat you should have all day. What’s a muffin lover to do? Eat unashamedly until her thighs look like muffin tops or find a low fat solution? I have chosen to find a low fat solution.

Whole-Wheat Apple Date Muffins

Description:

For a great wholesome alternative to a breakfast on-the-go, try these Whole-Wheat Apple Date Muffins! They are whole-wheat and low-fat, perfect for a breakfast or afternoon snack.

Preparation Time: 15 min

Cooking Time: 18 min

Ingredients

2 1/4 cups whole wheat flour

1 1/2 teaspoons baking soda

1/3 cup brown sugar, packed

3/4 cup buttermilk, nonfat

1 1/2 cups apples, finely chopped

3 tablespoons liquid egg substitute

1 teaspoon vanilla extract

1/2 cup chopped dates

Instructions

1. Preheat oven to 350 degrees F. Coat muffin cups with nonstick cooking spray.

2. Combine the flour, baking soda and brown sugar; stir to mix well.

3.Add the buttermilk, apples, egg substitute and vanilla extract; stir just until the dry ingredients
are moistened. Fold in the dates.

4. Fill the muffin cups 3/4 full with the batter. Bake for 16 to 18 minutes, or just until a toothpick
inserted in the center comes out clean.

5. Remove the muffin tin from the oven and allow it to sit for 5 minutes before removing the muffins. Serve warm or at room temperature.
