If you’re a die-hard cheese lover, chances are you love blue cheese. It comes in many varieties, with Gorgonzola and Roquefort being the most popular. Blue cheese salad dressing is similar to Ranch but of course, it has blue cheese in it! If you love blue cheese dressing, or if you’ve always wanted to make it, give this recipe a try. It’s creamy, rich, and delicious on a variety of salads.
For this recipe you’ll need:
4 ounces Roquefort Blue Cheese
1-cup mayonnaise
1-cup heavy cream
2 tsp. tarragon vinegar
1 tsp. kosher salt
½ tsp. black pepper
Puree ingredients in a food processor to desired consistency. It’s okay to leave some chunks of blue cheese in. This dressing can be served immediately or chilled and used at a later time.
You can put blue cheese dressing on just about any salad. Try it on a Cobb salad and the flavor is out of this world. It also works well on chopped salads, fancy green salads, and tomato-only salads. Here’s a recipe for a simple yet elegant salad. Try preparing this the next time you entertain. To Make This Salad:
Cut up one head of green leaf lettuce or cut it into two wedges. (If you’re serving four people you’ll need two heads of green leaf lettuce) Top the lettuce with tomatoes (heirloom tomatoes in all colors; orange, yellow, red, etc. are beautiful). Top with blue cheese dressing.
Voila! A flavorful and lovely salad that will accompany any meal with style.
Tip: If you’re presenting a wedge salad to your guests, make sure you trim the outer leaves first. Also, for a lovely presentation try placing a wedge of lettuce on the plate with the heirloom tomatoes beside the wedge rather than on top of it. Then drizzle dressing over both.
