Homemade Ice Cream Sandwiches

There is nothing that ‘screams’ summer more to me than ice cream sandwiches. For some reason this year, I have returned to the kitchen to make more frozen goodies and treats. (I’m sure that it has to do with the twins being older now.) In any case, this is next on our ‘to try’ list of recipes.

Is it worth it to make your own ice cream sandwiches? Um. . .YES!!! You can customize it anyway you want by filling your brownie with your choice of ice cream, running the sides through coconut or even adding ice cream topping to the top to make it a more ‘elegant’ dessert. Once you’ve made these, ice cream sandwiches will never be the same!

For the Brownie Part:

1/2 cup butter

4 squares of semi-sweet chocolate

2 eggs

1 cups of sugar

1 teaspoon of vanilla

3/4 cup all-purpose flour

1/4 teaspoon salt

In a microwave safe bowl melt the butter and chocolate and stir until smooth. (You can do this in a pot too.) Cool slightly. In a large mixing bowl, beat eggs and sugar. Stir in vanilla and chocolate mixture. Combine flour and salt; and gradually add to the chocolate mixture.

Pour mixture into a parchment paper lined 15 in. x 10-in. x 1-in. baking pan. Bake at 400 for 10 to 12 minutes or until center is set. Do NOT overbake–this is NOT a forgiving recipe.

Cool completely on a wire rack. Invert brownie onto a work surface and remove parchment paper. Cut your brownie in half, spread with your favorite ice cream. Before you partake of these delicious snacks, you should freeze the ice cream sandwich (without cutting it) for about 2 hours first.

A Few Tips & Ideas

Whatever flavor you choose, the ice cream must be softened so that it will spread evenly over the brownie without crumbling it.

Add nuts and ice cream topping on top of your ice cream before you add the top layer of brownie.

Once your sandwich has been frozen, cut into rectangles or triangles and dip the frozen sandwiches into melted chocolate OR cover with Magic Shell ice cream topping.

You can also take the sides of the ice cream sandwich and drag them through a bowl of nuts, coconut, or miniature chocolate chips. (Do this again, after it has been frozen as a sandwich.)
