Hot Bacon Dressing
4 strips bacon
1 hard-cooked egg, separated
1/4 cup cream
1/3 cup vinegar
1 teaspoon of sugar
1 teaspoon of mustard
1/4 teaspoon garlic salt
1/4 teaspoon basil
1/4 teaspoon tarragon
1/4 teaspoon parsley
1/4 teaspoon chives
Salt and pepper to taste
Cook the bacon until crispy, cutting into small pieces. In a saucepan, combine 2 tablespoons of bacon drippings, the mashed hard-cooked egg yolk, cream, vinegar, sugar, mustard, garlic salt, basil, tarragon, parsley, and chives. Add salt and pepper to taste. Add finely chopped egg white and bacon, heating mixture through. Cool slightly then pour over mixed greens, spinach, or lettuce.
