Hot Roasted Asparagus Salad
1 pound asparagus, trimmed and cut into 1/2-inch pieces
Cooking oil spray
Herbal seasoning
1/2 cups orange juice
1 tablespoon of limejuice
2 tablespoons orange marmalade
1/2 teaspoon gingerroot, grated
1 1/2 tablespoon olive oil
7 cups romaine lettuce, chopped
3 tablespoons pine nuts, toasted
Preheat oven to 450 degrees. Spread the asparagus on a baking sheet, spray with cooking spray. Roast until tender, about 12 minutes. Season the asparagus with herbal seasoning. In a blender, mix the juices, marmalade, gingerroot, and olive oil, processing until blended. Pour mixture in a serving dish. Arrange asparagus on top and then garnish with pine nuts.
