I was in a food chat room the other day and the talk was all about Huli Huli chicken. If you’re not familiar with it, it’s a type of chicken served in Hawaii. I’ve found it at Duke’s in Huntington Beach, California as well, and I can tell you that if it’s cooked right, it’s the best chicken ever.
Here’s a recipe I found for Huli Huli Chicken. Hope you enjoy it. I haven’t made it yet, so if you make it first, let me know how it is or what you think it needs!
For this recipe you’ll need:
2 fryers (2-3lbs. each, cut into pieces–OR 6 chicken breasts
3/4 cup dark shoyu (soy sauce)
1/2 cup fresh squeezed lime juice
1/2 cup honey
1/3 cup brown sugar
3 Tbs. olive oil
3 garlic cloves, minced
3 Tbs. Ketchup
2 Tbs. minced fresh ginger root
1 tsp. asian chile paste or sambal oelek
Lots of freshly ground black pepper to taste
kosher salt or sea salt salt to taste
1 tsp. sesame oil (optional)
To Make This Recipe:
Combine all ingredients and marinate the chicken in 3/4 of the marinade for at least four hours if possible. Grill the chicken or bake it in a 325 degree oven for 1 1/2 hours, basting often with the remaining sauce.
