Of all the cookie recipes I’ve come across lately, this one is the one I can’t wait to try. Little bundles of sweet goodness, these holidays are the best of everything rolled into one cookie. The frosting on top of these cookies sends them over the edge to decadence extraordinaire. If you’re looking for something new to bake this holiday season, this is a great option.
To make this recipe you’ll need:
2 ½ cups all-purpose flour
1 cup old-fashioned rolled oats
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon salt
1 cup firmly packed brown sugar
1 cup unsweetened applesauce
1 cup corn oil
1 teaspoon vanilla extract
1 cup dark raisins
½ cup chopped walnuts (2 ounces)
2 ½ cups powdered sugar
3 Tablespoons plus 1 teaspoon milk
½ teaspoon ground ginger
To make this recipe:
Preheat your oven to 350 degrees Fahrenheit and grease two cookie sheets with butter or cooking spray.
In a medium-sized bowl, mix together the flour, oats, baking soda, baking powder, cinnamon, nutmeg, and salt.
In a large bowl, beat together the brown sugar, applesauce, oil, and vanilla at medium speed until well blended.
Slowly, and at low speed, beat the flour mixture into the sugar mixture until a soft dough forms. You don’t want to over mix. Stir in the raisins and nuts with a wooden spoon.
Drop the dough by rounded teaspoonfuls onto prepared baking sheets, 2 inches apart.
Bake the cookies 10-12 minutes, until they are set. Transfer to wire racks to cool completely.
To make the icing, mix the confectioners’ sugar, milk, and ginger. Spread the icing on the cookies once the cookies have cooled. Let the cookies stand until set.
**Be sure not to put the frosting on the cookies before they’ve cooled or the frosting will run everywhere and melt!
