Indian Anyone? Two Easy Curry Recipes

Easy Shrimp Curry

For this recipe, you will need vegetable oil, one large onion, fresh curry leaves, ginger garlic paste, ground coriander, salt, ground turmeric, one tomato, ground red chili pepper, two pounds of medium shrimp, garam masala, and fresh cilantro.

To prep for this recipe, you will need to chop your onion, tomato, and enough cilantro to make one tablespoon. Peel and devein your shrimp.

Heat 1/4 cup of vegetable oil in a wok or skillet over high heat. Add the chopped onion and stir until browned. Add 10 fresh curry leaves, 1 tablespoon of ginger garlic paste, 1 teaspoon of ground coriander, and 2/3 teaspoon of salt. Stir well and cook for one minute.

Add 1/2 teaspoon of ground turmeric, the chopped tomato, 1 teaspoon of ground red chili pepper, the two pounds of shrimp, and 1/4 cup of water. Reduce the heat to medium and let cook for 7 or 8 minutes until the shrimp is done. Add extra salt and chili powder if necessary. Season with 1 teaspoon of garam masala and stir well. Serve with rice and garnish with chopped cilantro.

Maharaja Curry

For this recipe, you will need vegetable oil, cumin seed, two medium onions, ground turmeric, cayenne pepper, garam masala, garlic cloves, minced ginger, five tomatoes, and a pound of skinless, boneless chicken breast.

To prep for this recipe, you will need to chop both onions. Peel, seed, and chop all five tomatoes then puree in a blender until smooth. Cut the chicken breast into cubes. Peel and mince one garlic clove.

Heat 2 tablespoons of oil in a wok or skillet over medium heat. Add 1 teaspoon of cumin seeds and cook until they pop (about 30 seconds). Add the chopped onion and cook until brown. Add 1 teaspoon of ground turmeric, 1 teaspoon of cayenne pepper, 1 teaspoon of garam masala, the minced garlic clove, and 1 tablespoon of minced ginger and stir. Cook for two minutes.

Add the tomato puree and cubed chicken then stir. Reduce heat and cook for 20 minutes until the chicken is done.
