Inexpensive but Not Boring Meals

After the expense of Christmas it’s often a time we need to get back to more inexpensive meals. Inexpensive doesn’t need to mean boring. Here are a couple of inexpensive recipes, one using ground beef and the other using the humble beef sausage.

Gluten free beef sausages are available at most butchers and some supermarkets. In Australia, sausages sold in Coles supermarkets are gluten free. Just check the label whenever you by them though, as things change.

Devilled Cheddar Meatloaf

Ingredients

Meatloaf

1 and a half pound ground beef

Half cup grated carrot

10 ounce can cream corn

1-2 cloves garlic

Salt and pepper to taste

Filling

1 and half cups cold cooked rice

Half cup chapped spring onions or shallots

Half red capsicum

2 teaspoon gluten free Worcestershire sauce

Devilled topping

1 cup grated cheddar cheese

1 teaspoon honey

1 teaspoon gluten free Worcestershire sauce

1 teaspoon ground mustard

Quarter teaspoon cayenne pepper

Method

Place half meatloaf mixture in a greased loaf pan.

Press rice filling firmly over meat.

Press remaining meat mixture over top of the rice making sure all rice is covered.

Invert onto a greased oven tray leaving the pan on top of the meatloaf. Bake at 425 degrees F for 10- 12 minutes.

Remove pan from top. Bake a further 35 minutes.

Remove from oven and press devilled topping over the meatloaf. Return oven for 8-10 minutes or until cheese is melted.

Serve with mashed salad or vegetables. Serves 6

Saucy Sausages

Ingredients

6 sausages

1 sliced onion

5 ounces tomato paste

4 ounces mushrooms

I grated apple or half cup grated carrot

Half teaspoon mustard powder

2 teaspoons Tamari sauce

1 teaspoon lemon juice

1 teaspoon raw sugar

2 teaspoons gluten free corn flour

2 gluten free beef stock cubes

2 cups water

Salt and pepper to taste

Method

Prick sausages. Cook in a pan over medium heat till browned. Drain and place in greased casserole dish.

Drain off any fat in pan. Add sliced onion, tomato paste, mushrooms, mustard, tamari, lemon juice, sugar, salt and pepper, and corn flour blended with stock cubes and water.

Stirring constantly, cook till mixture boils and thickens.

Pour mixture over sausages. Cover and bake in moderate oven 340-350 degrees F for 30 minutes.

Serve with mashed potato or rice and a green vegetable.
