Who says that breakfast has to be standard American fare? Skip the cereal, douse the scrambled eggs and explore one of the following Italian breakfast ideas. Both of these ideas use eggs and toast. Mangia!
Lava Eggs
This dish is called Lava Eggs because my kids image the eggs have just finished riding down a volcano of hot lava and have come to land safely on dry land. This is a mild but flavorful dish.
Ingredients:
Jar or can of tomato sauce OR
(2 cans of crushed tomatoes
basil, oregano, salt and pepper to taste)
Eggs (at least two per person)
Your favorite sliced bread
Directions:
Toast bread slices and set aside
Meanwhile bring tomato sauce to a gentle simmer.
Carefully crack eggs into the sauce. You want to do this gently, one at a time, so they don’t touch.
Allow eggs to cook until done. Then scoop them out with a bit of the sauce onto the bread slices. Add more sauce on the side.
Egg in a Hole
Ever see the movie Moon Struck? Then you already know what this dish looks like! It has always been a favorite of mine.
Ingredients:
Good Italian Bread
Eggs
Olive Oil
Roasted Red Peppers
Directions:
Thickly slice the Italian bread. Next, remove a bit of the center of each slice to create a hole in the bread.
Heat the olive oil in a pan and then add the bread to toast.
Slowly crack an egg into the center of each bread hole. You’ll want to be slow and careful. Otherwise, the egg may leak out from underneath the bread instead of setting nicely. Good quality firm bread also helps.
When the bottom of the egg is well set, flip the slice of bread and egg over to cook the remaining side for a few minutes.
Flip the slice back and top with some roasted red pepper. Place a lid on the pan for a few minutes to warm the peppers. Enjoy!
Alternative: substitute mozzarella cheese for the roasted red pepper.
