Sometimes the simplest meals come together in a pinch. That’s what happened tonight. I didn’t want to order out…again. I didn’t want the same old chicken and rice dish, but all I had in the freezer was frozen chicken (the kind that comes in the freezer section individually frozen). So I created this recipe, after scouring my cabinets and trying to be creative. The flavors were yummy and it’s now my new staple dish for dinner in a flash.
For this recipe you’ll need:
4 Boneless, skinless chicken breasts (I used the store-brand breasts that come in the frozen section. They’re all in one bag but frozen individually—you may also use thawed chicken breasts)
1 package (16 ounces) frozen bell peppers (I used multicolored-yellow, red, orange)
1 cup Italian dressing, divided
2 packages Ramen Noodles with seasoning packet
1 tsp. Kosher salt (optional)
To make this recipe, spray a casserole dish with cooking spray. Add frozen peppers. Crush Ramen noodles with your hands and sprinkle the seasoning packet over this (you only need one seasoning packet). You may add ½ tsp. salt if you’d like. Add ¾ cup Italian dressing to the dish and mix with a wooden spoon until all the Ramen noodles are coated. Place frozen chicken (or thawed) on top of the noodle mixture and top with remaining ¼ cup Italian dressing and ½ tsp. salt.
Bake at 400 degrees, covered, for 45 minutes. Remove cover and continue to bake 30 minutes more or until chicken is cooked through.
**Cooking time may need to be adjusted to suit your own oven. If you use thawed chicken breasts, reduce the cooking time accordingly.
You may also omit the noodles and simply bake the chicken and peppers with Italian dressing. If you choose to do this, serve it over rice for a delicious, complete meal.
