I admit I’m not a huge sausage fan. But this recipe, I like. It’s filling and satisfying. The flavors and textures merry together to create a lovely taste.
To make this recipe you’ll need:
1 package (5 links) Italian Sausage or Turkey Italian Sausage (buy the sweet or spicy depending on your taste buds)
1 red bell pepper, julienned (cut into strips)
20 brown mushrooms, cut into fourths
1 large white or red onion, julienned
1 can (15 oz) tomato sauce + up to 2 cans water
1 tomato, diced
2 TB Worcestershire sauce
Fresh oregano and basil
To make this recipe:
Cut the sausage into desired pieces or leave whole. In olive oil, brown the sausage on all sides. Add onion, pepper, and mushrooms and cook until soft. Add tomato and cook for 2 minutes. Add tomato sauce, water, Worcestershire and seasonings. Boil covered for 15 minutes on medium heat. Uncover and boil an additional 15 minutes.
Serve over white rice.
To make white rice:
In a saucepan, bring 3 cups water, 1 TB butter, and 1 tsp. salt to a boil. Add 1 ½ cups long grain white rice (ex. basmati), stir. Bring to a boil then cover and reduce heat to LOW. Cook over low heat without peeking or stirring for 20 minutes. Let sit for five minutes then fluff rice with a fork.
