Every season and holiday Jello comes out with new fun and refreshing recipes. I love to incorporate Jello into my desserts because it adds a punch of flavor without packing on the sugar, fat, or calories. I add Jello to simple white cakes to make the famous Jello poke cake. Always a refreshing treat with fat free whipped topping and strawberries and perfect for spring and summer. Best of all, it is low fat and low sugar. I add in Jello instant pudding in a variety of flavors to low or fat free cakes to add in tons of flavor so you hardly notice it is low fat. Many of us want to indulge our sweet tooth without gaining a few inches so knowing how to add in flavor without fat is essential.
Strawberry Yogurt Bites
3 containers (6 oz. each) strawberry low-fat yogurt
1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
8 fresh strawberries, halved
Mix yogurt and dry gelatin mix in microwaveable bowl. Microwave on HIGH 5 min. or until gelatin is completely dissolved, stirring every 2 min.
Spoon into 16 paper-lined mini muffin cups. Refrigerate 1 hour or until firm.
Remove from liners; top with strawberries.
Raspberry Pomegranate Jellies
1 env. (1/4 oz.) KNOX Unflavored Gelatine
1/4 cup cold water
1/2 cup sugar, divided
2 Tbsp. cornstarch
1 cup pomegranate juice
2 pkg. (3 oz. each) JELL-O Raspberry Flavor Gelatin
Sprinkle unflavored gelatine over water in small bowl; let stand 1 min. Mix 1/4 cup sugar and cornstarch in medium saucepan. Gradually whisk in juice and unflavored gelatine until blended. Bring to boil on medium heat; cook 5 min., stirring constantly. Remove from heat. Add dry gelatin mixes; stir 2 min. until completely dissolved.
Pour into 9×5-inch loaf pan sprayed with cooking spray. Refrigerate 1 hour or until firm.
Unmold. Cut into 24 pieces. Coat with remaining sugar just before serving.
